My Go-To Summer Recipe with Samsung
Summertime calls for quick, easy and refreshing recipes that the whole family can enjoy! I’ve partnered with one of my favorite brands, Samsung Home Appliances, to help with all my summer recipes. With two littles and a full-time job, I’m all about quick and fresh meals. So today I wanted to share one of my go-to summer recipes with all of you!
I don’t know about you, but I’m a HUGE greek food fan! I could literally eat greek food everyday and never be mad about it if I could. One of my favorite dishes is greek pasta salad. It’s always been a favorite in my home growing up and now I get to share it with my own little family. It’s bright, it’s refreshing and super yummy- what’s not to love!
The best part about this recipe? You can probably find most of the ingredients already in your refrigerator. I’m obsessed with my Samsung Stainless Steel French Door Refrigerator . It has a FlexZone™ drawer that comes with four temperature control settings and a Smart Divider to help you keep your foods organized. The Twin Cooling Plus™ technology keeps your refrigerator and freezer at the right humidity levels so your fruits and vegetables stay fresher longer and less freezer burn. So my veggies and fruits are always ready to grab and go! The other great thing about this recipe is you can swap out whatever ingredients you want to suite you and your family’s preference!
Now, how do you make it? Real simple!
Prepare the dressing by whisking together extra-virgin olive oil, red wine vinegar, lemon juice, oregano, basil, garlic, honey and salt in a medium mixing bowl, set aside.
Cook pasta to al dente according to package instructions, then drain and place on a tray until cool.
Meanwhile add cucumber, tomatoes, onions, black olives, bell pepper and parsley to a large bowl.
Add cooled pasta to bowl, whisk dressing once more then pour over mixture in bowl. Toss then add in feta and toss again.
Thin mixture with up to 1/4 cup water. Chill up to 1 day if desired or serve right away.
*1/2 cup sliced kalamata olives may be subsituted
This dish is best served chilled on a hot summer day. So once I’m done putting this together I’ll pop this in my Samsung refrigerator to serve chilled! I love that our refrigerator is also energy efficient so that I can store and cool my meals without wasting energy! This spacious refrigerator includes adjustable shelves and door bins, 2 roomy crisper drawers and a separate Flex Zone drawer to keep all of my favorite summer ingredients fresh!
